Our Polenta is made from an organic heirloom flint corn grown at Cayuga Pure Organics in Brooktondale.  We grind it at a medium texture and leave the bran for a variety or textures and colors, including red, white, and yellow.

Spelt has a more distinct and nuttier flavor than wheat and is often used by bakers with a wheat sensitivity or allergy (it is not, however, gluten-free).  It has a slightly lighter color than wheat flour, and can be mixed with wheat flour or used alone. (LOCAL)

Made from organic hard red spring wheat, this flour has a protein content of 12.7%.  It is mainly used in whole wheat breads, but has also been used to make cookies and pizza dough.
