We can't guarantee you'll get the purple & white eggplant or the plain purple eggplant but whenever possible we'll try to give you a combination of them.
Pan-fried Eggplant with Feta
- Press sliced eggplant in salt for one hour to drain, then pat dry
- Fry eggplant in 2 tbsp olive oil (adding more oil for each pan full of eggplant) until golden
- Place fried eggplant in oven-proof pan, sprinkle with feta, pepper and paprika until feta begins to melt
- Top with freshly chopped parsley
- Eat and enjoy!
