This is a Philly brand cheese product that is made in Lowville, NY.

A bright yellow corn meal made from organic corn grown in Newfield and milled whole to a medium texture.

Our Polenta is made from an organic heirloom flint corn grown at Cayuga Pure Organics in Brooktondale.  We grind it at a medium texture and leave the bran for a variety or textures and colors, including red, white, and yellow.

Spelt has a more distinct and nuttier flavor than wheat and is often used by bakers with a wheat sensitivity or allergy (it is not, however, gluten-free).  It has a slightly lighter color than wheat flour, and can be mixed with wheat flour or used alone. (LOCAL)

ithaca soy tofu

Tofu is great for baking with as well as cooking.  My children LOVE and regularly eat cubed, pan-fried tofu with onions (fry tofu for seven minutes before adding onions, salt and a splash of vinegar).  I once made amazing, chewy brownies by subsituting tofu for eggs.  I can't seem to duplicate the recipe, but I still dream about it.
