ithaca soy tofu

Tofu is great for baking with as well as cooking.  My children LOVE and regularly eat cubed, pan-fried tofu with onions (fry tofu for seven minutes before adding onions, salt and a splash of vinegar).  I once made amazing, chewy brownies by subsituting tofu for eggs.  I can't seem to duplicate the recipe, but I still dream about it.

Yellow squash can be cooked in most of the same ways as zucchini including yummy pancakes and soups.

Shred zucchini for pancakes- just add it right into your favorite pancake recipe or mix with other firm veggies and an egg to hold it together.  Zucchini is also great for grilling, a simple side steamed, and awesome in soup.
