Tofu is great for baking with as well as cooking.  My children LOVE and regularly eat cubed, pan-fried tofu with onions (fry tofu for seven minutes before adding onions, salt and a splash of vinegar).  I once made amazing, chewy brownies by subsituting tofu for eggs.  I can't seem to duplicate the recipe, but I still dream about it.
